What to eat?  There are SO many options!  Instead of focusing all of your efforts on what you have to eliminate, think of all the new things you can try and the benefits of eating a cleaner diet! Here are a few of my favorites lately…. clean GF

Breakfast:

  • 2 poached eggs served over spinach & sliced tomato, topped with fresh grated Parmesan cheese and a side of sliced avocado
  • chocolate/peanut butter/chia seed pancakes – make a batch ahead of time to reheat throughout the week
  • Shakeology

AM Snack:

  • 1 cup of berries (blueberries, blackberries & strawberries) topped with 1-2 tbsp raw pumpkin seeds and sprinkled with cinnamon
  • 1 grapefruit topped with 2 tbsp chopped walnuts

Lunch:

  • “Anything  in the Fridge Salad” – basically any veggie I have with some kind of protein!  Today that consisted of organic mixed greens, chopped parsley, sautéed broccoli and onions (cooked in 1 tsp of coconut oil for about 5 mins), diced red pepper, sunflower seeds, 1 tbsp crumbled goat cheese and leftover grilled tuna from last night. Dressing was olive oil and balsamic vinegar

PM Snack:

  • Organic brown rice cake topped with sliced avocado, tomato and sprinkled with turmeric and pink Himalayan salt & turmeric
  • 3 dates filled with organic nut butter

Dinner:

  • 60z grilled wild caught swordfish w/sweet potato hash and grilled asparagus spears
