It’s squash season and I love this low calorie, flavorful replacement  for pasta!! Here is a recipe we had for dinner earlier this week.

  • 1 lb ground turkey
  • 1 jar spaghetti sauce (I use Victoria’s brand – low sodium, low sugar – can be found at Walmart)
  • 14 ounce can organic tomato sauce
  • salt, pepper, oregano, Italian seasoning, basil
  • extra virgin olive oil
  • 2 cloves mixed garlic
  • 1 spaghetti squash
  • 2 cups spinach
  • 1 ounce goat cheese

Cut squash in 1/2 lengthwise. Remove seeds. Place faces down on baking sheet and place in 400 degree oven for 35 minutes or until squash can be squeezed easily.

Remove from oven and let cool. If still warm, hold squash with a kitchen towel and scrape flesh out into a bowl with a fork – making “spaghetti.” Drizzle with 1-2 tbsp olive oil, salt and pepper.

In a skillet, brown turkey and drain extra liquid/fat. Add minced garlic and seasonings to taste and brown 2 more minutes. Add sauces to meat and simmer for 30-45 mins on very low heat to let flavors come together.

Spoon squash into dish, top with a handful of organic spinach, meat sauce and crumbled goat cheese.

*if you like some spice, add hot pepper flakes on top*
