I LOVE to cook!  But even more, I love to educate people and share delicious and simple healthy recipes so that you all can ENJOY healthy food as much as I do.

At least twice a week, I try to spend time in the Fit Envy Kitchen, developing new recipes or altering the unhealthy ones to make them healthy.
Chocolate cake for breakfast?  My chocolate coconut cake is a testament to this – if you have not tried it, you can find the recipe on the FIT ENVY app!

Actually, with over 115 clean recipes on my app it is the perfect resource when you are looking to try something new!

BUT, the kitchen has been a little quiet lately and I am ready to get cookin’ again.
AND that is where you all come in! Post in comments or send me a message with a food item that you need a good recipe for and I will post one 🙂
Yesterday on the Facebook page, I had a request for a cucumber recipe. If you look, there is a fantastic cucumber salad recipe on the app! Easy to prepare and full of fantastic summer flavors.

It’s almost time for summer tomatoes and fresh basil!
Enjoy this tasty side dish at your next cookout!

  • 6oz brown rice pasta
  • 2 cups grape tomatoes, halved
  • 1 cup seedless green grapes, halved
  • 1/3 cup thinly sliced fresh basil leaves
  • 2 tablespoons white balsamic vinegar
  • 2 tablespoons chopped shallots
  • 2 teaspoons capers
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon minced garlic – I use more b/c I LOVE garlic and it is good for you!
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 teaspoons extra-virgin olive oil
  • 4oz reduced-fat feta cheese

Cook pasta. Combine cooked pasta, tomatoes, grapes, and basil in a large bowl.  While pasta cooks, combine vinegar and next 6 ingredients (through pepper) in a small bowl, stirring with a whisk. Gradually add oil to vinegar mixture, stirring constantly with a whisk. Drizzle vinaigrette over pasta mixture; toss well to coat. Sprinkle with feta.
