IMG_5708After beginning summer vacation with my family and a week at the beach, I have also had a chance to get back in the Fit Envy Kitchen and try some new recipes!

My kids and hubby have really enjoyed grabbing the Oatmeal Breakfast Cookies that are super simple to make – with only 5 ingredients, no flour, no dairy and no added sugar!

I have also enjoyed spiralizing and ricing some veggies for new recipes 🙂

Beet Superfood SaladThe-Whole-Beet-Salad
1/2 cup cooked quinoa
1 1/2 cups water
2 medium beets – peeled and riced
2 heaping cups arugula
1/2 cup slivered almonds
1 avocado, diced
1 cup cooked edamame – out of the pod

Dressing: 1/4 cup apple cider vinegar, 2 tbsp lime juice, 1 tbsp chopped fresh mint, 2 tbsp honey, salt & pepper.

Combine all ingredients in a large bowl. Stir in dressing thoroughly. Top with 1 tbsp reduced fat feta or goat cheese for a bit of tanginess. ENJOY!

Walnut Protein Muffins
1 medium sweet potato – spiralized and riced
1/4 tsp cinnamon
1/4 tsp cardamom
1/2 tsp pink Himalayan salt
2 tbsp vanilla protein powder (I used Shakeology)
1/4 tsp baking powder
1 large organic egg
1 tbsp local honey
1/4 tsp vanilla extract
2 tbsp raisins
1/4 cup chopped walnuts

Preheat oven to 375.  Combine sweet potato, spices, protein powder, and baking soda in a bowl. Add the egg, honey and vanilla and mix. Stir in raisins and walnuts and spoon into muffin tins (sprayed with cooking spray).

Bake for 25 minutes and allow to cool before eating.
